We have
blackberries growing along our driveway faster than I can eat them. I don't post many sweet recipes on this site, but thought this was worth sharing. If you are going to have something sweet, you might as well make it from scratch! Last week I made a very simple blackberry cobbler, &
tonight decided to try a variation on the original recipe.
3 cups

Blackberries,
rinsed
|

|
Apple,
diced
|
¼
|
Lemon,
juiced
|
1
|
Egg
|
½ cup
|
Rolled oats,
ground into a course flour
|
½ cup
|
Spelt flour*
|
¾ cup
|
Sugar
|
6 Tbsp
|
Butter,
melted
|
*Use whatever flour you prefer. I like half spelt & half oat, but have used all spelt, all oat, or all regular flour.
PREPARATION
1. Pre-heat the oven to 375 degrees F. In a greased 8 inch baking dish, put in the
blackberries & apples & mix with the lemon juice.

2. Mix
the spelt flour, oat flour, sugar, & egg until it is crumbly-looking.
3. Lay the flour mixture on top of the fruit. Drizzle the melted butter over that.

4. Bake for 35-40 minutes or until the top of the
cobbler is light brown & bubbly.
