I have a
lime tree & avocado tree that are each dropping ripe fruit faster than we
can eat it, so I decided to make guacamole to go along with fish in a lime
marinade. I have only used the marinade
for steak, but discovered tonight that it is also good with halibut. I served the fish with brown rice, guacamole,
& salsa. The guacamole & salsa
were not B+ blood type diet friendly, but they were homemade &
delicious!
INGREDIENTS
Yield = 2
servings

5oz
pieces of halibut
|
2
|
Limes,
juiced & zested
|
1
|
Serrano
chili, diced
|
2
|
Garlic cloves
|
1 Tbsp
|
Cumin
|
1 tsp
|
Dried oregano
|
A few
|
Spring of
thyme
|
A pinch
|
Kosher salt
|
1 tbsp
|
Olive oil
|
PREPARATION
1. Make
the marinade. In a pestle, mash the garlic clove with ¼ tsp salt.
Add the herbs & mash. Add the lime juice, zest, serrano chili, cumin,
salt, & oil. Mix well.
2. Pour
over the fish in a shallow dish, & let sit in the refrigerator for 30-60 min
3. I made my rice, salsa, & guacamole while the
fish marinated.
4. Cook the fish in
a skillet with the marinade, covered until the fish is opaque. Add liquid if necessary.
