Lime Cumin Halibut


I have a lime tree & avocado tree that are each dropping ripe fruit faster than we can eat it, so I decided to make guacamole to go along with fish in a lime marinade.  I have only used the marinade for steak, but discovered tonight that it is also good with halibut.  I served the fish with brown rice, guacamole, & salsa.  The guacamole & salsa were not B+ blood type diet friendly, but they were homemade & delicious! 

INGREDIENTS

Yield = 2 servings

5oz pieces of halibut
2
Limes, juiced & zested
1
Serrano chili, diced
2
Garlic cloves
1 Tbsp
Cumin
1 tsp
Dried oregano
A few
Spring of thyme
A pinch
Kosher salt
1 tbsp
Olive oil

PREPARATION
1.  Make the marinade.  In a pestle, mash the garlic clove with ¼ tsp salt.  Add the herbs & mash.  Add the lime juice, zest, serrano chili, cumin, salt, & oil.  Mix well.  

2.  Pour over the fish in a shallow dish, & let sit in the refrigerator for 30-60 min
3.  I made my rice, salsa, & guacamole while the fish marinated.
4.  Cook the fish in a skillet with the marinade, covered until the fish is opaque.  Add liquid if necessary.
