Tonight I
made a batch of oatmeal for the next two mornings so that I won’t have to make
breakfast before work. I had a very ripe peach & a brown-speckled banana, so I made this easy,
healthy oatmeal.
INGREDIENTS
Yield = 2
large or 3 medium servings
2
|
Cups liquid
(water or milk)
|
1 cup
|
Old fashioned
oats
|
1
|
Banana,
sliced
|
1
|
Peach,
diced (frozen peaches will work if that’s all you have)
|
To taste
|
Nutmeg…freshly
grated if you have it
|
½ tsp
|
Vanilla
extract
|
¼ cup
|
Walnut pieces,
chopped
|
PREPARATION
1. In a small or medium saucepan, bring the
water or milk to a boil.
2. Stir
in the oats & cook until done (about 5 min) over low heat.
3. Stir in the fruit & vanilla extract. After a minute, fold in the walnut pieces
& remove from heat.
Enjoy!
