PREPARATION

Add the water/broth. Bring to a
boil, & then reduce to simmer.
5. Puree the soup with an immersion blender (or regular one if you don’t have a stick blender). I like to hand mash the soup first to get rid of large chunks.
Lately, whenever dishes are
missing “something,” I add a bit of lemon juice & am always happy with
it. If you aren’t sure how a seasoning
will taste, put a little of your soup/dish in a small container (shot glasses
are great for this), then add a little of the test spice. This way you won’t ruin a whole meal if you
don’t like your spice choice.
