DELICIOUS CABBAGE SALAD

Once in a while I buy lunch from a delicious Armenian restaurant.  The main reason I go there is to have a refreshing, light, lemony, cabbage salad.  Tonight I successfully recreated my favorite lunchtime side dish!  I made a gigantic batch because I plan to share. I used twice the ingredient quantities below.  

INGREDIENTS (Yield= 3 Qt)
1/2 head of green cabbage, washed, dried & shredded
1/2 head of red cabbage, washed, dried & shredded
1/2 onion, sliced in half & sliced thinly
2-3 cups shredded carrots 
1 bunch of parsley (regular or flat leaf), chopped
1 lemon, juiced
1/4 cup olive oil
1/4 red wine vinegar*
1/2 tsp sugar*
1/2 tsp salt
1 clove garlic, crushed or finely minced

*I was out of red wine vinegar tonight.  Inspired by my newest cookbook (The Improvisational Cook), I made a dressing with white vinegar & olive oil taste like red wine vinegar & oil.  I used 1/4 cup white wine vinegar & 1/2 tsp molasses instead of red wine vinegar & sugar. 

PREPARATION
1.  In a very large bowl combine the cabbage, onion, carrots, & parsley
2.  In a measuring cup, combine the olive oil, vinegar, salt, sugar.  Whisk together.  Taste & adjust the sugar/salt as needed.
3.  Add the lemon juice & garlic to the dressing & whisk together.
4.  Pour the dressing over the cabbage mix & toss well

This should keep for a few days.  Enjoy!
