Over the summer I saw
a post on Bodyrock.tv for ice-cream-less banana ice cream. I meant to
make it back then, but never did. You can use the banana as a base for
whatever variety you think of. I love Ben & Jerry's "Chunky
Monkey," so tonight I tried to make my own version.
I made enough for 2.
I don't recommend making this unless you will eat it right away.
The consistency is like soft serve ice cream, & I don't know how well
it does with re-freezing.
INGREDIENTS (for 2 servings)
Basic Recipe

nutmeg

Vanilla
extract
|
A little
|
Milk of
choice or yogurt as needed
|
Skinny Monkey Additions
|
|
4
|
Walnuts,
broken into pieces
|
1-2 Tbsp
|
chocolate
chips
|
Other Suggested Additions (pick whichever you like)
|
|
2 tsp
|
Unsweetened
cocoa powder
|
4-6
|
Nuts,
broken in pieces
|
¼ cup
|
Berries
|
1 Tbsp
|
Nut butter
|
PREPARATION
1. Cut 2 ripe bananas
into pieces & freeze them on a parchment paper-lined small baking sheet for
1-2 hours. Don't freeze longer than that, or you may have to thaw them a little
& add liquid (milk, water, yogurt...)
2. Place the
banana pieces, nutmeg, & vanilla extract in a food processor (a mini food processor works great). Pulse & scrape frequently. Blend on
high as the mixture becomes smoother, & add little milk or yogurt if
needed. Blend with the cocoa powder &/or nut butter if you are using
it.

3. Once smooth, add your
toppings (walnuts, chocolate chips, etc) & mix well.
